• 1. Hold your glass by the stem to stop the wine warming
• 2. Lean the glass at a 45 degree angle and inspect the colour and clarity of the wine against a white/clear background. The colour reveals the age, wine variety and sometimes also sweetness.
• 3. Briskly swirl the wine around in the glass, do this to release the aromas and let the wine breathe.. after having spent a couple of years in a bottle, it needs it!
• 4. Put the glass up to your nose, inhale.. and be seduced by the fragrance. Try to put a name to the aromas - oak, peppery, blackcurrant, pear, tropical, fig, vanilla or even chocolate?
• 5. Finally, take a small mouthful (no gulping) and swish around your palate (mouth), keeping the wine moving until it warms slightly. Let the wine cover all corners of your tastebuds as this allows you to fully experience the flavours of the wine plus distinguish its character and body (weight).
• 6. You have now officially tasted the wine and can choose to either swallow or spit it into the spittoon provided at the cellar door.
• 7. Imagine the type of food you could enjoy with the wine you have just tasted.
